Jo’s Overnight Apple-Cinnamon Oatmeal

Cooking Time: 6-7 Hours

Preheat Oven: Not Required

Ingredients:

  • 4 cups water
  • 1 1/3 cups apple juice
  • 1 cup steel-cut oats
  • 1/2 cup barley
  • 2 medium apples, coarsely chopped
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon salt
  • 1/4 cup brown sugar
  • Chopped pecans (for topping)
  • Honey (for serving)
  • Milk (for serving)

Instructions:

  1. Line a slow cooker with a disposable liner.
  2. In the slow cooker, combine water, apple juice, oats, barley, cinnamon, ginger, and salt.
  3. Cover and cook on low heat for 6 to 7 hours.
  4. Before serving, stir in brown sugar.
  5. Top with pecans and chopped apples.
  6. Serve with honey and milk.

Jo: “I swap nutmeg for the ginger and cook the apples with everything else instead of adding them after. I use water instead of apple juice so it’s not so sweet.” 😃
