Ingredients:
- 4 cups water
- 1 1/3 cups apple juice
- 1 cup steel-cut oats
- 1/2 cup barley
- 2 medium apples, coarsely chopped
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/4 teaspoon salt
- 1/4 cup brown sugar
- Chopped pecans (for topping)
- Honey (for serving)
- Milk (for serving)
Instructions:
- Line a slow cooker with a disposable liner.
- In the slow cooker, combine water, apple juice, oats, barley, cinnamon, ginger, and salt.
- Cover and cook on low heat for 6 to 7 hours.
- Before serving, stir in brown sugar.
- Top with pecans and chopped apples.
- Serve with honey and milk.
Jo: “I swap nutmeg for the ginger and cook the apples with everything else instead of adding them after. I use water instead of apple juice so it’s not so sweet.” 😃
